Baked Risotto – Recipes for Kids

Baked Risotto.

“Risotto is a classic Italian dish made of Arborio rice, a

starchy, short-grain variety that cooks to a creamy consistency.

Most well-stocked supermarkets carry it, either near other rice

products or with specialty grains.”

1 1/2 cups Arborio rice

Two 15-oz. cans vegetable stock

2 garlic cloves, finely minced

About 1 1/2 cups steamed fresh vegetable of your choice (green

peas, fresh corn kernels, finely chopped asparagus, or sliced

wild mushrooms)

Grated fresh Parmesan cheese for topping [or vegan Parmesan

alternative, like Soymage]

1. Preheat oven to 375[degrees]F.

2. Combine rice with stock, 1 cup water, and garlic in a 2-quart casserole. Cover and bake for 1 hour, stirring every 15 minutes. At the third stirring, stir in 1 cup water. When done, the rice should have a tender and creamy texture.

3. Stir in the vegetable, and let the risotto stand for 5 minutes before serving. Pass around the Parmesan cheese for topping.
