Fresh Choice tosses first-quarter profit into financial mix for FY 2000

Amy Spector

SANTA CLARA, CALIF. — After nearly a half-decade of store closures and wilting sales, Fresh Choice Inc., a 49-unit, soup-and-salad buffet company, has crisped its first-quarter performance with profitable returns and expansion on the horizon.

For the quarter, ended March 19, Fresh Choice reported earnings of $255,000, climbing from a $423,000 loss in the year-ago quarter.

The company reported sales of $17.13 million, a 2-percent increase over sales of $16.79 million in the first quarter of fiscal 1999, when the chain operated 51 restaurants. Fresh Choice ended fiscal 1999 with $74.1 million in sales, a slight 0.1-percent increase over the prior year, when sales reached $73.9 million.

Equally encouraging, according to company senior vice president and chief financial officer David Pertl, were the earnings of 4 cents per share, on both basic and diluted shares in fiscal 2000 vs. a loss of seven cents a share in the year-ago quarter.

Same-store sales continued in positive territory, posting a 5.2-percent gain for the quarter. The performance marks the fifth quarter of gains as the company turns a new expansion leaf, with plans to add one Fresh Choice location in Northern California this fiscal year, Pertl said.

Still, Fresh Choice remains a distant second in share value to San Diego-based competitor Garden Fresh, whose 20-percent unit growth, $62 million market capitalization and broader national reach for its 71 restaurants have helped chill investor interest in Fresh Choice. But even Garden Fresh’s stock price has slid nearly 50 percent in recent months, causing such analysts as U.S. Bancorp’s Allan Hickok, in Minneapolis, to ignore what seems to be an “in-and-out-of-favor category”

Pertl concedes that the company’s recent performance, including its first profitable first quarter since 1994, has failed to spark interest in the analyst community. Consequently, “the stock has gone down well below what it should have,” he said.

But Hickok suggested Fresh Choice’s best option might be to move forward as a privately held company.

“It’s statistically impossible for Fresh Choice to break out of the micro-cap limbo that they’re in,” Hickok said. “To put it in perspective, if you were an institutional buyer, you’d have to buy the whole company. Major institutions can’t participate,” he said.

Complicating the equation is that “the macro environment has never been better. Conditions are favorable. Valuations have never been lower,” Hickok said.

Still, Pertl said he is “optimistic about the earnings outlook” for Fresh Choice.

“Operations over the past couple of years have been working very hard,” Pertl said. “We rolled out retraining in 1998, and it took a while to incorporate it into the culture,” he conceded.

Though he declined to comment on future expansion plans, he reported that “the major closures are taken care of.”

Fresh Choice operates 47 Fresh Choice and Zoopa restaurants in California, Washington and Texas and two Fresh Choice Express quick-service units in Texas. The company bought the Zoopa! concept from Seattle-based Restaurants Unlimited in 1998 but will retain only the Zoopa brand for locations in Washington state, Pertl said, because Northern California customers indicated they preferred the Fresh Choice name. He described the two concepts as “identical.”

Store remodels at the full-service restaurants continue, with a $1.7 million to $1.9 million budget slotted for the 22 sites on tap for fiscal 2000. Pertl said five of those locations were completed in the first quarter.

Pertl said chain labor costs rose 15 percent over the past two years, prompting the company to replace daily soup preparation with a pouching system that reduces production to “two to three times per week.” He estimated labor cost savings of $500,000 annually from that system.

The Express concept, which Pertl said is still in test, is a quarter-scale, breakfast-and-lunch adaptation of the full-buffet concept, dual-branded with Java City and open Monday through Friday, Pertl said. “It’s designed for office complexes,” he said of the 1,500-square-foot prototype.

The first unit, in San Antonio, closed briefly following hurricane damage in March, first opened in July 1999. The second Texas location opened last month. The company plans to launch a third site in Northern California this year, Pertl said. He declined to detail operating results but noted, “Sales were not what we wanted, but costs were better than expected.”
