LAS VEGAS — Elizabeth Blau, former Mirage Resorts vice president of restaurant development, and Kerry Simon, former chef of Prime at the Bellagio resort here, debuted their new Simon Kitchen & Bar in the Hard Rock Hotel and Casino here.
The 180-seat Simon features American cuisine and marks the restaurant-ownership debut for Blau, who is president of the Las Vegas-based Elizabeth Blau and Associates consulting firm.
Chef-partner Simon’s menu also will reflect his training in New York at Lutece under Andre Soltner and his experiences bringing the Vong concept to Asia for chef Jean-Georges Vongerichten, Blau said. Simon Kitchen & Bar is geared to generate per-person tabs of $55, compared with the $100 checks of its in-hotel neighbor Nobu, she added.
