Burr named chef at Ocean View Resort – Richard Burr – Brief Article

SEASIDE, Ore. — Richard Burr, a U.S. Culinary Olympics team member, has been named executive chef and food and beverage director at the recently expanded Ocean View Resort here.

Burr moved to the 105-room resort overlooking the Pacific Ocean 80 miles from Portland after the owners added a new restaurant called Breakers and 4,500 square feet of additional convention meeting space. His staff numbers 60 and operates the 120-seat Breakers, a 90-seat lounge and 500 banquet seats on five levels.

Food created for the Breakers menu by Burr include sauteed loin of pork with fresh Washington State apples and a reduction of applejack brandy, $15.50, and pan-seared and roast loin of lamb deglazed with port, seasoned with fresh tarragon and garlic and served with demi-glace, $16.75.

Attending as an independent, Burr won a silver medal at the World Culinary Olympics in 1988 and is a member of the 1992 U.S. Central Team. Before joining the Ocean View Resort management team, Burr worked four years at the St. Joseph Country Club in St. Joseph, Mo.
