Johnson/Nelles has implemented advancements including several capacities in the Concrete Pit and both the Shallow and Deep Tank systems, expanding the line to 12 space-saving models suitable for all brine-type cheeses. Features include complete submersion of the cheese blocks and constant recirculation of full-strength brine during the entire brining phase.
Draining/matting conveyor systems, available in both two-belt and four-belt models, provide more uniform product quality, the supplier says. The PLC-automated control system ensures smooth, problem-free sequencing during the operational procedure, and woven polypropylene belts are operated by a specialized tracking system designed to promote long belt life.
The 60,000-lb. horizontal cheese vat uses relatively small diameter knives, which means less difference in speed along the radius of the blade assembly. The twin shaft, when in the cutting rotation, will produce very uniform sized cubes from the coagulum. Reducing over-cut will lower the amount of fines and decrease fat lost to the whey, the company says.
A new customized mix-proof valve system features multiple actuator stems, each with full stroke capability, permitting positive position verification for each valve stem. Each of the three valves in the compact system regulates the flow of a separate substance.
A new line of cheese equipment from Tetra Pak includes special knife designs to minimize the loss of fats and fines in certain cheeses; patented press machines for better yields; and automated systems to provide optimize output and reduce waste.

Central high-pressure (CHP) spray cleaning systems from Sani-Matic can be used in any cleaning operation that requires multiple work stations with any combination of high-pressure rinsing, foam cleaning and spray sanitizing. Features include central high-pressure supply unit, automated liquid level and temperature controls and multiple remote drop-stations.
CleanTech [R] handwashing systems help decrease the risks of foodborne illness associated with unclean hands, the supplier says. CleanTech systems also use less than one-half the amount of water used for manual handwashing. The cycle is clinically proven to be 60% more effective at removing pathogenic bacteria from the hands than manual handwashing, the company says.
Sparta has introduced the 45S-HD heavy-duty “Hercules” hand scrub brush featuring soak-proof design and pistol grip handle, plus extra-heavy gauge nylon bristles for added toughness. Hand scrub is 8 in. long with a 11/4-in. bristle trim.

Complete performance and design material on the new dairy plant configuration of King Co.’s DFOC make-up air systems are available with SCFM capacities up to 120,000 and BTU/hour outputs from 3,888 to 15,552. These units feature cooling via environmentally friendly direct expansion refrigerants, chilled water or ammonia.
A new microfiltration pilot plant is available to dairy processors. Niro’s plant is completely equipped with the latest technology for testing the most challenging products, the company says. The pilot plant uses ceramic membranes, which are resistant to degradation from harsh chemicals, and capillary membranes, which are very hydrophilic with low fat and protein absorption.
